Why This Matters
Loaded trays are heavy, hot, and moving through crowded rooms at the exact moments guests are least predictable, rising to greet someone or pushing back a chair. Poor tray technique injures servers' backs over a career and injures guests in a single bad moment. This is one of the most physically repeated tasks in the department, which makes bad habits compound fast.
