Why This Matters
Stewarding closes last and sets the building's judgment on the whole kitchen the next morning. An out-of-sequence closing leaves standing water in sinks, chemicals unsecured, or a machine drained wrong and damaged by morning. The sequence exists because closing under fatigue is when shortcuts feel most tempting and cost the most.
